Smoked Prosciutto and Provolone Croquettes

Ingredients:
  • 300g Potatoes
  • 100g Smoked Prosciutto, finely chopped
  • 100g Provolone, diced
  • 30g Parmigiano Reggiano, grated
  • 2 eggs  
  • 50g breadcrumbs + extra for coating
  • 30g all-purpose flour
  • Salt and pepper, to taste
  • Nutmeg, optional
  • 1 tbsp olive oil or melted butter
  • Oil for frying
Recipe:
  1. Cook the Potatoes
    Boil potatoes (skin on) until tender (20 mins). Peel and mash while warm.
  1. Prepare the Mixture
    Mix mashed potato with pieces of prosciutto, provolone, parmigiano, egg, breadcrumbs, flour, oil/butter, seasoning, and nutmeg until firm.
  1. Shape the Croquettes
    Form into small cylinders or balls. Chill if soft (15–20 mins).
  1. Coat
    Beat second egg. Dip each croquette in egg, then coat in breadcrumbs.
  1. Fry
    Heat oil to 170°C (340°F). Fry in batches for 3–4 mins until golden. Drain on paper towels.
  1. Serve
    Hot with aioli, dipping sauce or salad.
